The Shepard variety have a green skin, and only available during February to April, weather permitting.  They are longer and more elongated than the Hass.

Their smooth glossy green skin doesn’t change, even when ripe – inside their yellow flesh has a nutty flavour and buttery texture.

And the best bit, they don’t brown once cut.
