Bean shoots aren’t just there to look pretty sitting on top of a Laksa.  They provide useful nutrients including Vitamin C and folate, along with fibre and a range of other vitamins, minerals and naturally occurring plant compounds.

Bean shoots are a little different from many of our other vegetables because the warm, moist conditions needed to grow sprouts can also allow bacteria to grow.

So keep them properly refrigerated, use them while they’re lovely and fresh, and cook them thoroughly before eating.
