These are great to have on hand for when you don’t have time for breakfast. Grab one of these on your way out the door to keep you going.
Super yummy & easy to make. Use organic ingredients where you can.
1 & 1/4 cup rolled oats
1/2 cup coconut
1/2 cup medjool dates pitted and chopped
1/4 cup dried apricots diced
1/4 cup pepitas
1/4 cup sunflower kernels
1/4 cup chopped nuts (eg. almonds, cashews, walnuts)
1/4 cup melted coconut oil
1/4 cup maple syrup
1/4 cup almond or hazel meal
melted dark chocolate to drizzle on top
Preheat oven to 180C
Mix all the ingredients together then press into a small tin lined with baking paper.
Bake for approx 35 mins until golden.
Allow to cool, then cut into bars or pieces & drizzle with melted chocolate.
