Protein Chocolate Clusters

These crunchy clusters are so easy to make, especially with the kids.

And they’re super healthy, high in protein & fibre, low in sugar and gluten free!

Ingredients:

1/4 cup brown rice syrup

1/2 cup peanut butter (or any nut butter you like)

2 tablespoons maple syrup

1/4 teaspoon salt

1/2 teaspoon vanilla

1 cup buckwheat

1/2 cup almonds, roughly chopped

1 & 1/2 brown rice puffs

1 cup desiccated coconut

1/2 cup raw cacao

Method:

Preheat the oven to 150C

Combine the brown rice syrup, maple syrup, peanut butter, salt & vanilla in a large bowl.  Then add the remaining ingredients and mix with your hands to combine.  Make sure all the dry ingredients are mixed in well and coated.

Spread mix in clumps onto a tray lined with baking paper and bake for about 20 minutes.

Allow to cool then store in jars for an awesome cereal or protein snack.
